Iranian Beluga Caviar comes from the largest sturgeon of all; the Huso Huso sturgeon. Its original origin is from the Caspian Sea, although we can also occasionally find it in the Black or Adriatic Sea.

It is characterized by a grayish color and a smooth, creamy and intense texture. There are categories of sturgeon that can live up to 100 years, measure more than 6 meters and weigh up to 2,000 kilos.

The 000 category represents the highest quality within beluga caviar and is used to designate its light color.

Always make sure that the CITES label is on the back of the can. It is the seal that certifies the original origin of the caviar and its sustainable exploitation. If it is a Huso Huso sturgeon, "HUS" will appear and if it comes from Iran, "IR". 

To alleviate unsustainable exploitation and illegal trade in 1998, The International Trade in Endangered Species of Wild Fauna and Flora (CITES) created the regulations for international trade in sturgeon species.
